This vegetable has so many great health benefits, but many just eat the broccoli flower, and do not utilize the leaves and the stalks. The flower contains vitamins A, C, and E, as well as calcium, magnesium, and antioxidants.
But many feel that the stalks and leaves are not edible. But in fact, they are entirely edible. Broccoli leaves contain 90% of the daily vitamin A requirement. This not only helps with our sight but helps the immune system as well.
There is also 43% of the daily requirement of vitamin C, which is very helpful in preventing cancer. The leaves and stalks may be cooked right along with the broccoli flowers.
Broccoli stalks taste sweet and have more fiber than the actual broccoli flower. When cooking the stalks, one may wish to cook them first for a few minutes, as these will take longer to cook. Once they have been cooking for a few minutes, the leaves and flowers may be added to the pot.
