Cottonfruit also goes by the name sandoricum koetjape and it originates from Indochina and peninsular Malaysia. The edible part of this fruit is the inside pulp and it is usually consumed raw.

This fruit is very good for people afflicted by diabetes because it has low glycemic levels and ellevated levels of fiber. Fiber can reduce the sugar retention in the blood and also slow down the digesting process of the cottonfruit thus preventing a spike in the blood sugar levels.

Sample Recipe

Ingredients:

  • 400g of finely chopped and seeded cottonfruit
  • 3 pieces of chili
  • 250g of slide pork
  • 2 tablespoons of crushed garlic
  • 1 tablespoon of cooking oil
  • 1/2 cup of onions (sliced)
  • 1+1/2 cup of coconut milk
  • 2 pcs. of shrimp broth cube

Method:

First soak the cotton fruit in salted water for about 30 minutes and after that drain them dry. Heat the oil with garlic and onion and saute these ingredients. Mix in the pork and shrimp broth cubes and cook for 3 minutes. Add in the cotton fruit and cook for 3-4 minutes.

Mix in the coconut milk and simmer on low heat for 15 minutes. Add in the chili peppers or spice and cook until the cotton fruit becomes softer.
